Black Bean Dip

1 Tbs canned Chopped Green Chilies

1 small Onion, chopped (1/4 cup)

1 clove Garlic, crushed

1 can (15 oz.)Black Beans, rinsed and drained

1/2 cup Fat Free Plain Yogurt

1/2 tsp Ground Cumin

1/4 tsp Salt


Place chilies, onion, garlic, and beans in blender or food processor. Blend until smooth.

Mix bean mixture, yogurt, cumin, and salt.

Serve cold, or heat in 1/2 quart sauce pan over medium heat, stirring frequently.

Yields 11 pancakes



Veggie French Bread Appetizer/Snack

2 large Tomatos, chopped

1 medium Cucumber, peeled & chopped

4 Green Onions

1/2 cup chopped Green Peppers

3/4 cup Italian or Greek Salad Dressing (non-msg)

1 loaf French Bread


In a bowl, combine first 5 ingredients. Toast bread until lightly browned. Top with tomato mixture. Serve immediately.
